My basic Cashew Cheese that also works as Mayonnaise, Sour cream, pasta sauce dip!

Ingredients

  • 2 cups cashew nuts, soaked
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons lemon juices
  • 2 tablespoons white miso or nutritional yeast
  • 4 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 cup water

Methods

  • Step 1

    Blend all ingredients until smooth.

    VARIATION:
    Cashew Sour Cream: Omit white miso and increase the amount of salt to 1 1/2 teaspoons.
    Mayonnaise: Omit white miso and lemon juice and increase the amount of salt to 1 1/2 teaspoons.
