- 2 cups cashew nuts, soaked
- 2 tablespoons apple cider vinegar
- 3 tablespoons lemon juices
- 2 tablespoons white miso or nutritional yeast
- 4 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 cup water
Blend all ingredients until smooth.
Cashew Sour Cream: Omit white miso and increase the amount of salt to 1 1/2 teaspoons.
Mayonnaise: Omit white miso and lemon juice and increase the amount of salt to 1 1/2 teaspoons.
