What You’ll Learn

A Comprehensive 10-Day Training in the Art of Raw Vegan Desserts

This 10-day in-person training is an immersive, hands-on education in the foundational techniques, ingredients, tools, and creative processes behind world-class raw vegan desserts.

Whether you’re a culinary professional looking to expand your repertoire, a wellness practitioner integrating food into your healing work, or a passionate home creator stepping into plant-based cuisine for the first time—this course gives you the practical skills and creative confidence to bring raw desserts into your kitchen, your business, or your personal evolution.

You’ll be trained inside our fully equipped academy kitchen in Ubud, Bali, where each day blends practical technique, sensory education, creative exploration, and community collaboration. We work in small teams to ensure personalized guidance and direct experience. Every module builds toward your ability to craft professional-quality raw vegan sweets that are as nourishing as they are beautiful.

Course Structure Highlights

The training is divided into four progressive phases, beginning with essential techniques and culminating in fully plated creations and your own signature final project.

Phase 1: Foundations of Raw Preparation

You’ll begin with essential tools, pantry organization, food safety, and kitchen workflow. We cover:

  • Proper use of raw dessert tools: dehydrators, food processors, high-speed blenders, etc.

  • Soaking, activating, and dehydrating nuts and seeds

  • Creating nut milks, date pastes, and flour alternatives

  • Sweeteners, binders, and allergy-safe substitutions

  • Basic smoothie formulations and raw superfoods

  • Introduction to food presentation and smartphone photography

Phase 2: Classic Raw Desserts

You’ll move into iconic dessert formats, from brownies to tarts and layered cakes, while mastering textures, layering, and flavor dynamics:

  • Raw chocolate ganache, raspberry coulis & quick vanilla ice cream

  • Brownie & blondie creation with ice cream assembly

  • Double chocolate tart with structured layering

  • Zebra cake with pattern technique and professional plating

Phase 3: Advanced Textures & Multi-Layered Creations

Here we introduce thickeners like agar and sea moss and develop complex plated desserts:

  • Multi-layered tiramisu (coffee cake, mousse, cream) with optional matcha version

  • Raw doughnuts with salted caramel & lavender frostings

  • Nice cream bowls with natural coloring and textural contrast

  • Mud slide cake with advanced mandala, swirl & Picasso-style decoration

Phase 4: Signature Recipes & Visual Impact

You’ll explore our most requested café creations and learn refined piping and assembly techniques:

  • Banana dream pie with custard, cream, ganache layers

  • Fruit roll-ups with fig compote and fruit leathers

  • Almond butter cookies with mango jam (dehydrated)

  • Chocolate birthday cake with rum raisin, matcha ganache, and cashew “butter” cream

  • Piping techniques for decoration, plating and final presentation

Final Project & Certification

Your training concludes with a Final Project, where you’ll conceptualize, prepare, and present your own dessert creation using the skills you’ve developed throughout the course. You’ll receive personalized feedback and participate in a celebratory graduation gathering with your cohort.

Upon successful completion, you’ll be awarded a Raw Dessert Chef Level 1 Certification from Sayuri Healing Food Academy, and you’ll be eligible to join Level 2 Dessert Training or continue with other Sayuri programs, both online and offline.

Beyond the Kitchen

To deepen your experience of raw ingredients and local culture, we include a guided visit to a traditional virgin coconut oil maker in Ubud. Optional group dinners, excursions, and communal activities are also offered throughout the training, along with access to the vibrant community at Sayuri Healing Food Café.

Certification

Certificate & Chef Directory

Students receive a RAW DESSERTS CHEF Level 1 certificate from Sayuri Healing Food Academy at the end of the training.

Once you receive your certification, you are entitled to be featured on Sayuri Healing Food Chef Directory page with your profile and links to socials and website(s). This page is for the alumni to gain credibility, connect around the world, to share how everyone is expanding their carrier and creative projects, and also for those who are looking for professional plant-based chefs world-wide.

After the training, you will be asked to inform us the detail if you wish to be listed. After your confirmation, you will be listed in our Raw Food Chef teacher directory on our website.

Raw Food Chef Alliance

Apart from our Chef Directly, we are a certified plant-based/ raw food educational school of Raw Food Chef Alliance (https://rawfoodchefalliance.com/) and our program is entitled to give students the opportunity to register by themselves as Raw Food Chef. Your Journey into Raw Dessert Mastery, Step-by-Step

This 10-day training is built around a progressive and immersive learning experience, moving from foundational preparation to advanced raw dessert creations. Each module is carefully designed to give you the tools, knowledge, and confidence to create raw sweets that are not only beautiful and delicious but also healing, nourishing, and deeply satisfying.

You’ll work in small teams at fully equipped workstations, balancing instructor demonstrations with guided hands-on practice. Expect tasting, troubleshooting, presenting, and refining your skills throughout every module.

EXTRA: FIELD TRIP & CULTURAL EXPERIENCE

Coconut Oil Maker Visit

Visit a traditional Balinese virgin coconut oil maker. Learn the manual process and taste fresh, high-quality oil while connecting to the cultural roots of key ingredients.

Schedule

Our training is purposefully condensed from 9.30 to 15:30 every day to give you the time to attend yoga classes in town before or after class, and also to give you the opportunity to discover the incredible variety of plant-based cafés and restaurants in Ubud. We will provide you with a list of our favourites and highly recommend you try them out to widen your experience! Go in groups, taste, and share!

Fundamental Module

You’ve completed FUNDAMENTAL already?

Fundamental Phase (MODULE 1-4) is the same content for all our level 1 CHEF TRAINING. (raw food chef, raw dessert chef and fermentation chef)

If you already took Fundamental Phase in our other level 1 training in Bali,

  • You will receive 1 MILLION IDR meal voucher that you can use at our café!
  • Please take this Fundamental section again as recap of your learning.
  • If you would like to skip this part, you are welcome to join from day 3 and please do inform us in advance.
Meals

Breakfast: not included in our course but you are welcome to order from the cafe before the class and eat during the classes. All orders from the café are not included in the tuition fee, so they must be paid when placing the order.

Lunch: The food that is being created during the classes will be your lunch combined with the BUFFET served from Sayuri Healing Food Café. Buffet will be the mixture of raw and cooked meal depending on the student’s needs.

When YOU cancel

Please note that there will be no refund or discounts for arriving late, leaving early, flight cancellations, travel delays or illness. If you cancel your participation in the event for any reason, the refund policy below will apply, with no exceptions. To protect yourself further, we strongly encourage you to purchase travel insurance.

Refunds policy is as follows:

Chef Trainings and Retreats:
  • More than 8 weeks before the start of the course: 100% refund, minus 10% handling fee.
  • 4 to 8 weeks before the start of the course: 50% refund, minus 10% handling fee.
  • Less than 4 weeks before the start of the course: no refund.
1 Day Workshops and Intensive Cooking Courses:
  • 1 week or more before the class: 100% refund, minus 10% handling fee.
  • 6 days or less before the class: no refund.
Bespoke classes for Retreat Groups & Private Classes:
  • Deposit of 120 USD is non-refundable.

When WE cancel:

We reserve the right to adjust the program (i.e. replace a facilitator, etc.).

In the unlikely event that we must cancel the event due to illness, emergency, death, natural disaster or political upheaval, etc., alternate dates will be offered. Registrants unable to attend on the alternate dates will receive a full refund.

for Academy Trainings and Cooking Classes

Are you able to provide more details on your Certification?

Our certificates are a proof of completion of each individual training. We offer certain trainings in modules or levels, which is reflected in the certificates. There is no world standard certification in the raw vegan culinary world at the moment, not like the Yoga Alliance.

However our certificates describe the content of the training in detail and are recognised within the raw vegan culinary world. Our foundational Raw Chef Training level 1 certificate proves the achievement of a basic raw kitchen skill set and plant-based nutrition knowledge.

Will I be able to work in Bali or Indonesia with your Certification after the training?

Our certificate is very useful and well recognised in the raw food field, but in Indonesia restaurants very rarely hire foreigners as the immigration rules are very strict and local salaries are lower than foreigners expect. Even volunteering and internships are restricted by the strict immigration policies. In exceptional cases, our café will consider long-term internships (6+ months) but the intern will need to cover all travel, accommodation and living expenses including the “kitas”/work permit costs.

Do I need advanced/level 2 training to start cooking professionally?

It takes a lot of courage, sweat and tears to cook professionally! Our trainings are a stepping stone into the vegan culinary world and then you will need to practice, practice, practice. Gain experience by volunteering or interning in cafés and restaurants or by assisting experienced teachers in cooking classes and culinary trainings. This will give you opportunities and contacts for your future career.

Can you recommend working opportunities locally or worldwide?

Will I be able to offer workshops and train others after taking your trainings?

Your Raw Chef Training looks similar to the Seeds of Life Training, what is the difference?

Sayuri is co-founder of The Seeds Of Life and co-creator of the original Seeds Of Life Raw Chef Training. She is, however not involved with The Seeds of Life project anymore and the trainings have developed since then. Sayuri likes to integrate Eastern philosophies such as Ayurveda and Chinese Tonic Herbalism into her teachings and focuses on World Cuisine recipes and the energetic aspects of food and eating.

What is the difference between your training and the PlantLab trainings?

Our raw chef trainings are more condensed, we share a similar curriculum in 2 weeks instead of four. We focus on world cuisine recipes, Eastern nutrition philosophies and we offer lectures on holistic, plant-based nutrition, Ayurveda, Chinese Tonic Herbs and Indonesian Jamu. What is the difference between your training and all the others on the market?

Trust your instincts! You will naturally be drawn towards the training that will benefit you at this particular time in your life. Don’t overthink things :)

Many of us have taken several trainings, just like many yoga teachers have taken different yoga teacher trainings. Elaina Love’s course is more about the cleansing raw life-style , less nuts, low glycemic index. PlantLab’s courses are more technical, more about individual plating & presentation, less nutrition (separate culinary nutrition course), less Eastern holistic perspective.

What is the difference between your 2-week Raw Chef Training and your 4-Day Intensive Course?

The 4-day Intensive is a demo-style class in a fun group of 10-20 like-minded people in which we share the basic foundations, techniques and recipes of our raw food lifestyle. In 8 x 2-hour classes we touch on raw kitchen equipment, ingredients, fermentation, dehydration, flavour balancing, raw chocolate… and many desserts!

The 2-week Raw Chef Training is a deep-dive into experiencing the raw vegan lifestyle and learning the practical skills and techniques in groups of 4 at your own equipped workstations. Students also hear talks on Western and Eastern nutrition and philosophy, and we go on field trips.

Both are truly life-changing, they simply depend on the time- and financial investment you are wanting to make at this time in your life

I have been raw-vegan for several years and am familiar with many techniques, will Level 1 be challenging enough for me?

We are very confident that all our trainings will provide great value, even for long-time raw food lifestyle practitioners and experienced chefs.

Are your courses for beginners or professionals?

All our level 1 courses are equally suitable for both. We very often have an inspiring mix of health professionals who are new to the culinary world and seasoned chefs who are new to the world of healthy, raw vegan food. We all learn from each other!

Raw Food kitchens are very different from commercial kitchens, not only with regards to the techniques and equipment, but also to philosophy and kitchen culture. If you are a beginner, we will explain raw vegan basics from the beginning. If you are a pro, you will take many new ideas, techniques, and a whole new worldview back home, promised!

Do I need any prior knowledge to attend your classes and trainings?

Unless stated in the course description, none of our classes or trainings require prior knowledge or experience in raw vegan food.

Do you recommend any books or videos I can read before attending your training?

First of all, we recommend you try eating a high-raw food diet for at least a little while before joining our trainings. Even if it is just adding more smoothies and big salads to your usual diet. It will make it easier to dive straight into our Ubud lifestyle! Personal experience is so valuable!

Do I need to bring a chef’s knife?

If you already have a favourite knife, we definitely recommend bringing it. It is much more fun working with good equipment you are familiar with. We have enough knives for you to borrow if you do not have one though, no worries.

Can you recommend a particular chef’s knife brand?

We like Global, Wüsthof, Shun, and Victorinox. We would recommend a 18-21 cm blade + a smaller pairing knife. Try them out in a shop first and buy something that feels right for your hand. Sayuri likes an 18 cm blade.

What is the deadline for full payment / booking a course?

Until the course is fully booked you can enlist: we confirm bookings in the order of payment/receipt.

Once a course or training is full, you won’t be able to purchase and submissions will be closed.

Is there a maximum class size? Do I need to sign up early?

Our studio capacity is 16 for raw chef/desserts/chocolatier trainings. Some dates fill up very quickly, please check in with us before booking. The maximum capacity for 4-day intensives is 24, so no worries here!

How can I find accommodation in Ubud?

There are many options from the Four Seasons to cheap and cheerful homestays. We recommend looking on Airbnb, Agoda and Booking.com as only you can know what standard you are looking for.

Where can I practice yoga in Ubud?

There are many studios! The two largest are Yoga Barn and Radiantly Alive, and a smaller but charming one called Intuitive Flow in penestanan as well. They all offer different yoga styles, vibes and classes.

Usada and Seeds of Life offer Ashtanga Mysore practice every morning, as does Ashtanga Yoga Bali Research Center (15 mins bike ride outside of town).

Can I bring my baby?

Children and babies are not allowed to attend the Trainings or Courses for safety reasons.

However, Bali is very child-friendly and you can easily find a trustworthy and competent nanny. They cost around 100,000 IDR/hour. you are welcome to contact them directly.
