Training Overview

Are you ready to up your game and become a true raw food culinary artist?

Join our internationally renowned Raw Food Chef Training Level 2 and learn how to prepare luscious raw living food.

Prerequisite: To attend this course, you must have attended our Level 1 Raw Food Chef Training or an equivalent training (please contact [email protected] to validate any other training).

You have participated in your first Raw Food Chef Training and are ready to learn more? You want to incorporate advanced techniques and ingredients into your food creations? Spend 9 days in the truly magical island of Bali with like-minded food artists.

What you will learn

  • Our famous favorite recipes that we serve at the Sayuri Healing Food Café
  • How to create next level gourmet dishes using new techniques such as foams, drizzles, sauces and oils to decorate beautiful plating presentation like 5-star restaurants
  • How to introduce new tools such as the sheet slicer and the smoking gun to create a wide variety of pasta and noodle recipes, and to elaborate dishes with deeper flavor.

You will master the magic of sauces, drizzles, and foams to garnish and decorate all your dishes. During this 9-day training you will become equipped to master the art of plating and presentation.

Your experience will culminate in your final project, where you will create and present your individual restaurant-style plate, using all your newly acquired tricks and techniques.

In this training

In our RAW FOOD CHEF Level 2 training, we will be focusing on different cuisines from all over the world, such as Norwegian-style “gravlax” open sandwich with papaya smoked salmon and onion flat bread, coconut “bacon” sandwich & fries, Italian lasagne, Japanese nigiri sushi with cashew smoked eel, coconut squid and many mind-blowing toppings, Balinese raw nasi campur, breakfast burrito with corn scrambled “egg”, Italian tortellini, Asian noodle & spring roll, garment raw cuisine using a dehydrator and more.

All those fancy dishes are raw vegan, except for the medicinal mushroom lecture that we add as bonus to enhance and support your raw food lifestyle. We will explore the benefits and culinary value of medicinal mushrooms like Chaga mushroom & Lion’s mane and their usage in recipes. We will create dual extract tinctures with tremendous health benefits positively impacting your overall well-being and life time health.

In order to provide the complete experience as a raw food chef and the full confidence to start teaching raw food workshops and working for retreat centers and big restaurants, the training includes Sayuri’s tips & tricks on becoming a retreat chef: pricing, meal planning and catering for a large group, general costing & pricing and tips & techniques for raw food demonstrations.

Certification

At the end of the training, you will receive a RAW FOOD CHEF Level 2 certificate from the Sayuri Healing Food Academy (See CERTIFICATION TAB for more info).

Where you’ll study

You will have hands-on practice at our fully equipped workstations, where you will work in teams to replicate and re-create our Sayuri Healing Food recipes, magic and techniques. Each class will have demonstrations and hands-on practice. Our training includes lunch from Sayuri Healing Food Café combined with the meals that you will make during the classes, a field trip related to the training content, and a final graduation party.

You will spend quality time with an inspiring group of people from all over the world, sharing your experiences and learning from each other. By the end of the course, you will not only have gained confidence in working in gourmet raw food restaurants and in teaching raw food workshops, but you will also make best friends for the rest of your life.

About Ubud

The Indonesian island Bali is a dream destination with Ubud being its spiritual, cultural and artistic centre. Ubud is a mecca of raw and vegan restaurants and has some of the world-best yoga centers. Before or after the classes, you will have plenty of opportunities to explore the Ubud lifestyle, go to music and dance events and nourish yourself in one of the many spas or nature walks through lush jungles to one of the hundreds of waterfalls in the closer surroundings.

Teamwork

During our trainings we encourage and facilitate participants to work together as a team and to create food magic together. When we create something together with others, the joy, excitement and rewards multiply. The whole experience is so much more than just learning amazing recipes and cooking delicious dishes (although this is an important part of the training, too). After the training, what usually stays with each one of us, are the friendships we make, the experiences we go through together and the feelings and emotions we share. It is truly a life-time experience!

Final Project

The training ends with a final project in which you will apply all skills and knowledge you learned to develop your own creations. There are many highlights in our in-person trainings, but this is one of the top experiences because you will witness with your own eyes the magic of love of your creation and the transformation and heart-opening of the people with the food that you create.

About our Academy

Our Bali Academy classroom is located within the premisses of Sayuri Healing Food Café, where you can hang out, relax and connect with each other to build a beautiful community. You will have sufficient time to enjoy the vibrant life happening in the cafe, have some coffee and our famous desserts and join many events happening at our studio.

Certification

Certificate & Chef Directory

Students receive a RAW FOOD CHEF Level 2 certificate from Sayuri Healing Food Academy at the end of the training.

Once you receive your certification, you are entitled to be featured on Sayuri Healing Food Chef Directory page. This page is for the alumni to connect around the world, to share how everyone is expanding their carrier and creative projects, and also for those who are looking for professional vegan chefs world-wide.

After the training, you will be asked to inform us the detail if you wish to be listed. After your confirmation, you will be listed in our Raw Food Chef teacher directory on our website.

Raw Food Chef Alliance

Apart from our Chef Directly, we are a certified plant-based/ raw food educational school of Raw Food Chef Alliance (https://rawfoodchefalliance.com/) and our program is entitled to give students the opportunity to register by themselves as Raw Food Chef. Schedule

Our training is purposefully condensed from 9:30 am to 3:30 pm every day to give you the time to attend yoga classes in town before or after class, and also to give you the opportunity to discover the incredible variety of plant-based cafés and restaurants in Ubud. We will provide you with a list of our favourites and highly recommend you try them out to widen your experience. Go in groups, taste, and share!

Please note this draft training schedule is subject to minor changes but it will give you an idea of our flow throughout the training. The final time table will be provided on your arrival.

Opening

1st day: No class. Opening circle at 5pm, followed by welcome dinner

Meals

Breakfast: not included in our course but you are welcome to order from the cafe before the class and eat during the classes. All orders from the café are not included in the tuition fee, so they must be paid when placing the order.

Lunch: The food that is being created during the classes will be your lunch combined with the BUFFET served from Sayuri Healing Food Café. Buffet will be the mixture of raw and cooked meal depending on the student’s needs.

Visitors from most countries do not require a visa if you are staying for 30 days or less. Cancellation policy for Academy Classes & Trainings

When YOU cancel

Please note that there will be no refund or discounts for arriving late, leaving early, flight cancellations, travel delays or illness. If you cancel your participation in the event for any reason, the refund policy below will apply, with no exceptions. To protect yourself further, we strongly encourage you to purchase travel insurance.

Refunds policy is as follows:

Chef Trainings and Retreats:
  • More than 8 weeks before the start of the course: 100% refund, minus 10% handling fee.
  • 4 to 8 weeks before the start of the course: 50% refund, minus 10% handling fee.
  • Less than 4 weeks before the start of the course: no refund.
1 Day Workshops and Intensive Cooking Courses:
  • 1 week or more before the class: 100% refund, minus 10% handling fee.
  • 6 days or less before the class: no refund.
Bespoke classes for Retreat Groups & Private Classes:
  • Deposit of 120 USD is non-refundable.

When WE cancel:

We reserve the right to adjust the program (i.e. replace a facilitator, etc.).

Force Majeure:

In the unlikely event that we must cancel the event due to illness, emergency, death, natural disaster or political upheaval, etc., alternate dates will be offered. Registrants unable to attend on the alternate dates will receive a full refund.

We cannot, however, compensate you for any incurred airfare, travel, or accommodation costs. To cover these risks, we highly recommend you purchase travel insurance.

Our certificates are a proof of completion of each individual training. We offer certain trainings in modules or levels, which is reflected in the certificates. There is no world standard certification in the raw vegan culinary world at the moment, not like the Yoga Alliance.

However our certificates describe the content of the training in detail and are recognised within the raw vegan culinary world. Our foundational Raw Chef Training level 1 certificate proves the achievement of a basic raw kitchen skill set and plant-based nutrition knowledge.

Will I be able to work in Bali or Indonesia with your Certification after the training?

Our certificate is very useful and well recognised in the raw food field, but in Indonesia restaurants very rarely hire foreigners as the immigration rules are very strict and local salaries are lower than foreigners expect. Even volunteering and internships are restricted by the strict immigration policies. In exceptional cases, our café will consider long-term internships (6+ months) but the intern will need to cover all travel, accommodation and living expenses including the “kitas”/work permit costs.

Do I need advanced/level 2 training to start cooking professionally?

It takes a lot of courage, sweat and tears to cook professionally! Our trainings are a stepping stone into the vegan culinary world and then you will need to practice, practice, practice. Gain experience by volunteering or interning in cafés and restaurants or by assisting experienced teachers in cooking classes and culinary trainings. This will give you opportunities and contacts for your future career.

Will I be able to offer workshops and train others after taking your trainings?

Your Raw Chef Training looks similar to the Seeds of Life Training, what is the difference?

Sayuri is co-founder of The Seeds Of Life and co-creator of the original Seeds Of Life Raw Chef Training. She is, however not involved with The Seeds of Life project anymore and the trainings have developed since then. Sayuri likes to integrate Eastern philosophies such as Ayurveda and Chinese Tonic Herbalism into her teachings and focuses on World Cuisine recipes and the energetic aspects of food and eating.

What is the difference between your training and the PlantLab trainings?

Our raw chef trainings are more condensed, we share a similar curriculum in 2 weeks instead of four. We focus on world cuisine recipes, Eastern nutrition philosophies and we offer lectures on holistic, plant-based nutrition, Ayurveda, Chinese Tonic Herbs and Indonesian Jamu. What is the difference between your training and all the others on the market?

Trust your instincts! You will naturally be drawn towards the training that will benefit you at this particular time in your life. Don’t overthink things :)

Many of us have taken several trainings, just like many yoga teachers have taken different yoga teacher trainings. Elaina Love’s course is more about the cleansing raw life-style , less nuts, low glycemic index. PlantLab’s courses are more technical, more about individual plating & presentation, less nutrition (separate culinary nutrition course), less Eastern holistic perspective.

What is the difference between your 2-week Raw Chef Training and your 4-Day Intensive Course?

The 4-day Intensive is a demo-style class in a fun group of 10-20 like-minded people in which we share the basic foundations, techniques and recipes of our raw food lifestyle. In 8 x 2-hour classes we touch on raw kitchen equipment, ingredients, fermentation, dehydration, flavour balancing, raw chocolate… and many desserts!

The 2-week Raw Chef Training is a deep-dive into experiencing the raw vegan lifestyle and learning the practical skills and techniques in groups of 4 at your own equipped workstations. Students also hear talks on Western and Eastern nutrition and philosophy, and we go on field trips.

Both are truly life-changing, they simply depend on the time- and financial investment you are wanting to make at this time in your life

I have been raw-vegan for several years and am familiar with many techniques, will Level 1 be challenging enough for me?

We are very confident that all our trainings will provide great value, even for long-time raw food lifestyle practitioners and experienced chefs.

Are your courses for beginners or professionals?

All our level 1 courses are equally suitable for both. We very often have an inspiring mix of health professionals who are new to the culinary world and seasoned chefs who are new to the world of healthy, raw vegan food. We all learn from each other!

Raw Food kitchens are very different from commercial kitchens, not only with regards to the techniques and equipment, but also to philosophy and kitchen culture. If you are a beginner, we will explain raw vegan basics from the beginning. If you are a pro, you will take many new ideas, techniques, and a whole new worldview back home, promised!

Do I need any prior knowledge to attend your classes and trainings?

Unless stated in the course description, none of our classes or trainings require prior knowledge or experience in raw vegan food.

Do you recommend any books or videos I can read before attending your training?

First of all, we recommend you try eating a high-raw food diet for at least a little while before joining our trainings. Even if it is just adding more smoothies and big salads to your usual diet. It will make it easier to dive straight into our Ubud lifestyle! Personal experience is so valuable!

Do I need to bring a chef’s knife?

If you already have a favourite knife, we definitely recommend bringing it. It is much more fun working with good equipment you are familiar with. We have enough knives for you to borrow if you do not have one though, no worries.

Can you recommend a particular chef’s knife brand?

We like Global, Wüsthof, Shun, and Victorinox. We would recommend a 18-21 cm blade + a smaller pairing knife. Try them out in a shop first and buy something that feels right for your hand. Sayuri likes an 18 cm blade.

What is the deadline for full payment / booking a course?

Until the course is fully booked you can enlist: we confirm bookings in the order of payment/receipt.

Once a course or training is full, you won’t be able to purchase and submissions will be closed.

Is there a maximum class size? Do I need to sign up early?

Our studio capacity is 16 for raw chef/desserts/chocolatier trainings. Some dates fill up very quickly, please check in with us before booking. The maximum capacity for 4-day intensives is 24, so no worries here!

There are many options from the Four Seasons to cheap and cheerful homestays. We recommend looking on Airbnb, Agoda and Booking.com as only you can know what standard you are looking for.

Where can I practice yoga in Ubud?

There are many studios! The two largest are Yoga Barn and Radiantly Alive, and a smaller but charming one called Intuitive Flow in penestanan as well. They all offer different yoga styles, vibes and classes.

Usada and Seeds of Life offer Ashtanga Mysore practice every morning, as does Ashtanga Yoga Bali Research Center (15 mins bike ride outside of town).

Can I bring my baby?

Children and babies are not allowed to attend the Trainings or Courses for safety reasons.

However, Bali is very child-friendly and you can easily find a trustworthy and competent nanny. They cost around 100,000 IDR/hour. you are welcome to contact them directly.
